Cheesy Ground Beef Sandwich Recipe

Loose Meat Sandwiches

These ground beef sub sandwiches are one of those super quick, easy dinner recipes that is tasty and satisfying. It is inexpensive and great for feeding a large family or hungry crowd. Perfect for game-day, Super Bowl parties or just a no-fuss weeknight dinner.
 
 
GROUND BEEF:
I prefer to use a lean ground beef that way there isn’t much (if any) fat to drain off. But any ground beef you have on hand will work, just be sure to drain off any excess grease. Ground turkey or chicken can also be used instead of ground beef.
 
 
ONION OPTIONS:
This recipe calls for yellow onion. But feel free to swap it with white onion, sweet onions or even red onion. Also, the onion can be omitted if that is your preference.
 
PEPPER OPTIONS:
This recipe calls for green bell pepper. Red, yellow or orange bell peppers can be used instead for a slightly sweeter peppiness.
 
 
CHEESE OPTIONS:
This recipe calls for good old Velveeta Cheese. If Velveeta isn’t your thing, sub with any melty cheese such as shredded Colby/jack, mozzarella or American.

STORAGE AND REHEATING INSTRUCTIONS: 

Store leftovers in an airtight container in the refrigerator for up to 3 days.

To reheat, wrap subs in foil. Bake at 375ºF for 10-15 minutes or until heated through.

Ingredients

  • Lbs Lean Ground Beef
  • 1 Yellow Onion diced small
  • 1 Green Bell Pepper diced small
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 6 ounces Velveeta Cheese

Instructions

  • Preheat the oven to 400F.
  • In large skillet - combine ground beef, onions, bell peppers, salt and pepper. Sauté until beef is browned and vegetables are tender. Drain off any excess grease from the skillet or using a slotted spoon, remove the meat mixture from the skillet to a large bowl.
  • Place sub rolls (open side up) into casserole dish. Divide meat mixture evenly between 6 sliced sub rolls.
  • Thinly slice cheese then place on top of the meat filled sub rolls.
  • Bake for 5 minutes until cheese is melted and sub rolls have browned.
  • Top with your favorite sauce such as: ketchup, BBQ sauce, mayonnaise, or sriracha mayo.
