Why Use Rotisserie Chicken?

Rotisserie Chicken Salad Faq’s
Any cooked, shredded, or diced chicken works well. Rotisserie chicken simply saves time and adds extra flavor.
Stored in an airtight container, chicken salad lasts 3–4 days. Keep it chilled and don’t leave it at room temperature for extended periods.
Chicken salad made with mayonnaise or fresh vegetables does not freeze well — the texture becomes watery.
Once slightly cooled, remove the skin and pull the meat apart using two forks or your fingers. Warm chicken shreds more easily than cold chicken.
It often tastes even better the next day as the flavors meld. Just give it a stir before serving.
Popular choices include celery, red onion, grapes, cranberries, pecans, almonds, dill, parsley, mustard, and pickles. Customize based on your taste.
Add a little more mayo, yogurt, or a splash of lemon juice. Sometimes rotisserie chicken breast can be drier, so extra dressing helps.

Hi – I just found your recipe from a quick Google search and I wanted to say my boyfriend and I both loved it!! He is generally not fond of the overly mayo heavy salads so this was perfect. Still has great texture / flavor and not at all dry. This will be my go to easy chicken salad – thank you!
Skin on or off??? The pictures look the skin is on?
This is my go-to way to use up leftover rotisserie chicken – but it’s so good, I sometimes buy extra just to make it. It’s extra tasty in a buttery croissant 🙂
