Prime Rib Caramelized Onion Sandwiches

These prime rib sandwiches come together quite easily using leftover prime rib roast. Slice the prime rib thin, caramelize some onions, mix the horseradish mayo then just assemble. Done.

I take my sandwiches very seriously. There are no plain mustard and bologna on white bread sandwiches happening at my house. These prime rib sandwiches are perfect without being overly fussy.

  • Leftover Prime Rib
  • Ciabatta, French or Sour Dough Rolls
  • Sweet Onions
  • Prepared Horseradish
  • Mayonnaise
  • Spring Mix Greens

How To Make Leftover Prime Rib Sandwiches

  1. Prepare caramelized onions.
  2. Thinly slice the prime rib, as close to shaved as possible. (I leave it cold. If preferred, heat quickly in a skillet just until warm.)
  3. Mix mayo and horseradish.
  4. If toasting bread, brush with oil from caramelized onions and toast in the oven.
  5. Spread horseradish mayo onto top and bottom of rolls. Layer greens, prime rib, onions and more greens. Serve.
