Is this recipe very spicy?

No. It’s mildly spiced as written. You can increase heat by adding jalapeños, hot enchilada sauce, or extra chili powder.

Can I make this ahead of time?

Yes. Assemble the casserole up to 24 hours in advance and refrigerate. Bake when ready to serve.

What’s the best cheese to use?

A Mexican blend works great, but cheddar, Monterey Jack, or pepper jack are also excellent options.
