SPICY CORN RECIPE
Corn Ribs are a great way to serve fresh corn to a hungry crowd. They can take as many ribs as they want and dip them in their favorite sauces. A great way to add loads of flavor to corn on the cob.

INGREDIENT OPTIONS:
- Adjust the seasonings to fit your tastes.
- Blue cheese can be substituted with feta, feta, cotija or goat cheese.
- Parsley can be used in place of cilantro. Or just omit entirely.

CORN RIBS RECIPE
Ingredients
- 4 Large Corn Cobs (cut into ¼, long ways)
- 1/2 cup Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Tajin
- 1 teaspoon Smoked Paprika
- 1 teaspoon Oregano
- 1 cup Mayo
- 2 tablespoon Sriracha or Favorite Hot Sauce
- Blue Cheese Crumbles
- Fresh Cilantro chopped
Instructions
- Preheat oven to 400ºF
- Slice corn cobs into fourths, long ways.
- Combine olive oil, garlic powder, tajin, smoked paprika, and oregano in a bowl. Whisk until well combined.
- Brush mixture onto each slice of corn.
- Place on a baking sheet lined with parchment paper.
- Bake for 10 to 15 minutes or until golden brown. Or grill until browned.
- Mix mayo and sriracha until well combined.
- Top corn with blue cheese crumbles and cilantro.
- Serve with spicy mayo dip.
