Besides the chips and salsa, my favorite part of going out for Mexican food is the beans and rice.Well here is an easy homemade version of the Spanish Rice – and here is a recipe for REFRIED BEANS.

Serve alongside these CHICKEN TAQUITOS, ENCHILADA MEATBALLS or CILANTRO LIME CHICKEN.

And for a full effect make these CHIPS and SALSA.

The margaritas are totally up to you – I always include margaritas!

Recipe Notes:

  • Storage suggestion: Store in an airtight container in the refrigerator for 3-4 days.
  • Possible substitutions: You can use a different color of bell pepper (yellow, green, orange). You can use brown rice to substitute white rice, simply cook longer (as long as the rice package directs). You can remove jalapeno from the ingredients if you prefer less spicy rice.

SPANISH RICE RECIPE

Equipment

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • ½ red bell pepper diced
  • 1 jalapeno seeded and diced
  • 1 cup white rice
  • ½ teaspoon cumin
  • ½ teaspoon sea salt
  • 8 ounces tomato sauce
  • 1 cup chicken broth

Instructions

  • Sautee the onion, minced garlic, bell pepper, and jalapeno in olive oil over medium heat using a large saucepan. Cook until the vegetables become slightly tender.
  • Pour the white rice into the saucepan and cook for 1-2 minutes.
    Add the cumin, sea salt, tomato sauce, and chicken broth into the rice mixture.
  • Allow the mixture to come to a rolling boil, then cover with lid. Turn the heat to medium-low and cook for 15-20 minutes. Serve warm topped with cilantro and limes.
