This Kale Slaw Salad Recipe is the best of both worlds, kale salad and coleslaw combined to make a tasty nutritious side dish. Kale, cabbage, seeds and dried cranberries tossed with a creamy poppy seed dressing . . . so good!

Kale Salad With Cranberries

Salads that have a bit of sweet and a bit of salty are my favorite. So this Creamy Kale Slaw is great because it has so many flavors and textures. The dried cranberries add that sweetness while the sunflower seeds and pepitas add the crunchy saltiness.

Mixing the kale with a cabbage coleslaw blend makes this kale salad more approachable for those that aren’t kale super-fans. . . yet. The creamy poppy seed dressing brings it all together to make this the ultimate Kale Salad.

Can You Use Bagged Prepared Kale For Salad

Notice that I use already prepared store bought coleslaw but prepare the kale myself. I’m all about shortcuts when they work for the recipe. Already chopped store bought kale is awful! I never, ever use it because the tough ribs/stems are not removed before it is chopped. It is definitely worth taking the time to rip the kale from the stems (discard that super tough stem) when making any type of kale salad.

It is simple enough. Just wash the kale, rip the leaves from the thick stem portion, then chop the leafy parts.

  • Coleslaw Mix
  • Curly Kale
  • Dried Cranberries
  • Shelled Sunflower Seeds
  • Hulled Pepitas
  • Lemon
  • Mayonnaise
  • Honey
  • Dijon Mustard
  • Poppy Seeds

How To Make Creamy Kale Salad

  1. Combine the coleslaw, kale, cranberries, sunflower seeds, pepitas and lemon zest.
  2. Make Dressing: mix mayo, lemon juice, honey, mustard, poppy seeds, salt and pepper.
  3. Pour dressing over salad and toss until evenly coated.
  4. Serve immediately or store in refrigerator until serving.

Ingredients

  • 8 oz Coleslaw Mix
  • 1 Small Bunch Curly Kale - stems removed leaves chopped
  • 1/2 Cup Dried Cranberries
  • 1/2 Cup Shelled Sunflower Seeds
  • 1/2 Cup Hulled Pepitas
  • Zest of 1 Lemon
  • Dressing:
  • 1/2 Cup Mayonnaise
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon Mustard
  • 2 teaspoons Poppy Seeds
  • Salt/Pepper - to taste

Instructions

  • Combine coleslaw, kale, cranberries, sunflower seeds, pepitas and lemon zest.
    Make Dressing: mix mayo, lemon juice, honey, mustard, poppy seeds, salt and pepper.
    Pour dressing over salad and toss until evenly coated. Taste and add more salt/pepper to preferrence.
    Serve immediately or store in refrigerator until serving.
