Stuffed Cabbage Casserole Recipe in One Pot
I absolutely LOVE this casserole! Ever since I made this Easy Stuffed Cabbage Casserole this has been a regular type of meal at my house. I also have a Cabbage Roll Soup that I enjoy as well.
So naturally, now that I am eating low carb, I decided to create an Unstuffed Cabbage Casserole that is low carb and Keto friendly. I just make rice on the side for my daughter.
Is Cabbage Casserole Healthy
Yes! This hearty casserole is full of healthy veggies and lean protein. I think cabbage has been a super food before super foods were even a thing! You could also use ground turkey or chicken if you are avoiding beef.
I added an orange bell pepper to this recipe for flavor and color. If you are following a strict low carb diet feel free to omit the orange pepper. That will save you about 9 total carbs or 6 net carbs overall.
Is Cabbage Good For A Low Carb Diet
Yes! One cup of raw cabbage contains approximately 22 calories, 5 carbs and 2 grams of fiber. 3 net carbs.
That means that cabbage is most definitely Keto friendly and a great choice to fill up those vegetable carbs.

Would one bag of slaw mix be enough or should I use 2 bags since it cooks down so much?
Thanks for sharing this Low Carb Unstuffed Cabbage Casserole Recipe, this one seems so delicious , will try this weekend . Thanks for sharing this one.
Made this with “Impossible Meat”. Very good. Thank you
No they are not hot…they are tomatoes that are roasted/charred a bit…but you can use regular chopped tomatoes as well.
This was delicious!!!! Made a ton, so definitely have lunch for a couple of days. I wouldn’t change a thing!
Oh my! This was fabulous! I doubled the fire roasted tomatoes, but otherwise kept everything the same. I had two servings tonight, then put the rest away so I wouldn’t eat any more!
Can you put it in a casserole dish and make in the iven?
Can’t believe how delicious this easy recipe was. Everyone loved it, thank you so much for posting it, it is a meal I will be making often.

Hi! This looks delicious and plan to make it tonight! Grocery store gave me a big head of cabbage…can you estimate how many cups or how much cabbage should be used? Thanks!!
Made tonight and neither my husband nor I liked it. Way too much cheese. I didn’t leave the cabbage in long but once I added the cheese, the cabbage was so soggy. I was basically meat and cabbage in a bowl. 🤷♀️
Delicious! The whole family loved it. I doubled the recipe and used my new enameled dutch oven. It cooked well in there and looked pretty. This recipe does lend itself to alterations for personal taste but was great as written. Yes, this will be on my permanent list of recipes, I’ve tried others like this, this one is the best!
I know this switches up the dish a bit, but whenever I make this I add a taco seasoning packet 😋
Does anyone add rice?
This looks great..but I would try to make with gr.turkey and put some cauliflower rice in it and also bake it a bit in the oven to melt the cheese.
Absolutely delicious! Added Spanish rice with more petite diced tomatoes and didn’t realize we forgot the cheese. Good with or without. It was so yummy! My husband & I love this dish.
Do the above numbers cover the entire casserole, not just one helping?
I put a frozen cube of hatch green chile sauce in every casserole I make. You can never say a casserole is flavorless again.
Great idea – sounds delicious!
