MASHED POTATO RECIPE

Mashed potatoes are one of my favorite side dishes. In fact, I eat cheesy creamy mashed potatoes for dinner on a regular basis. These mashed potatoes can easily be a meal on their own or served alongside your favorite main course.

CREAMY MASHED POTATOES WITH CHEDDAR

Ingredients

  • 6 Medium Russet Potatoes
  • 6 Tablespoons Butter
  • ½ Cup Cream
  • ¼ Cup Sour Cream
  • 1 ¼ Cup Shredded Irish Cheddar Cheese
  • Salt - to taste

Instructions

  • Bring large pot of water to a boil. Peel and quarter potatoes, add to the boiling water. Boil the potatoes until fork tender.
  • Drain the potatoes then transfer to a large bowl. While still hot add the 6 Tablespoons of butter, cream, sour cream, and ¼ teaspoon of salt to start. Using a potato masher or electric mixer, mash or whip the potatoes until the butter has melted and is mixed in.
  • Add more salt, butter, or cream to taste and preference.

Notes

Depending on the size of your potatoes you may need a little more cream in the mash.
