MASHED POTATO RECIPE
Mashed potatoes are one of my favorite side dishes. In fact, I eat cheesy creamy mashed potatoes for dinner on a regular basis. These mashed potatoes can easily be a meal on their own or served alongside your favorite main course.

These particular mashed potatoes are great served with this GUINNESS BEEF STEW and topped with CARAMELIZED LEEKS.
WHAT TO SERVE MASHED POTATOES WITH:
BEEF STEW – SALISBURY HAMBURGER STEAKS – FILET MIGNON – ROASTED TURKEY BREAST

CREAMY MASHED POTATOES WITH CHEDDAR

Ingredients
- 6 Medium Russet Potatoes
- 6 Tablespoons Butter
- ½ Cup Cream
- ¼ Cup Sour Cream
- 1 ¼ Cup Shredded Irish Cheddar Cheese
- Salt - to taste
Instructions
- Bring large pot of water to a boil. Peel and quarter potatoes, add to the boiling water. Boil the potatoes until fork tender.
- Drain the potatoes then transfer to a large bowl. While still hot add the 6 Tablespoons of butter, cream, sour cream, and ¼ teaspoon of salt to start. Using a potato masher or electric mixer, mash or whip the potatoes until the butter has melted and is mixed in.
- Add more salt, butter, or cream to taste and preference.
