Stuffed Cabbage Casserole Recipe in One Pot

I absolutely LOVE this casserole! Ever since I made this Easy Stuffed Cabbage Casserole this has been a regular type of meal at my house. I also have a Cabbage Roll Soup that I enjoy as well.

So naturally, now that I am eating low carb, I decided to create an Unstuffed Cabbage Casserole that is low carb and Keto friendly. I just make rice on the side for my daughter.

Is Cabbage Casserole Healthy

Yes! This hearty casserole is full of healthy veggies and lean protein. I think cabbage has been a super food before super foods were even a thing! You could also use ground turkey or chicken if you are avoiding beef.

I added an orange bell pepper to this recipe for flavor and color. If you are following a strict low carb diet feel free to omit the orange pepper. That will save you about 9 total carbs or 6 net carbs overall.

Is Cabbage Good For A Low Carb Diet

Yes! One cup of raw cabbage contains approximately 22 calories, 5 carbs and 2 grams of fiber. 3 net carbs.

That means that cabbage is most definitely Keto friendly and a great choice to fill up those vegetable carbs.

  • Oil
  • Ground Beef
  • Sweet Onion
  • Orange Bell Pepper
  • Garlic
  • Fire Roasted Diced Tomatoes
  • Smoked Paprika
  • Dried Oregano
  • Garlic Powder
  • Onion Powder
  • Salt/Pepper
  • Green Cabbage
  • Shredded Cheddar/Jack Cheese
How To Make Unstuffed Cabbage Roll Casserole
  1. Sauté oil, beef, onion and orange pepper over medium/high in large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.
  2. Add garlic and sauté 1 more minute.
  3. Stir in tomatoes, spices, salt and pepper. Top with cabbage. Cover and cook 15-20 minutes or until cabbage is tender.
  4. Top with cheese, cover until melted then serve.

  1. I made this last night for dinner and it was wonderful. Even my boyfriend LOVED it and requested that I make it again. I added a little more paprika than the recipe called for (since I’m a paprika fiend) and a few shakes of worcestershire sauce, other than that I followed the recipe exactly. This will without a doubt be added to our regular rotation. Thank you!

When I accidentally asked for two heads of cabbage instead of two heads of cauliflower (Spanish blunder), I had to find some recipes to use up my almost five pound beautiful head of cabbage (gave away the other one)! Being in Mexico, I prepared my own ‘fire roasted tomatoes’ and had already sliced the cabbage to disinfect it. None of these slight changes seemed to affect the outcome of the recipe. Cabbage would not be something I choose to eat, but this recipe was delicious and will be added to my recipes to keep on hand. Thank you for sharing!!

  5. I have to echo a previous review that said this dish was pretty tasteless! Only change I made was regular paprika instead of smoked. I even added a little cayenne for a bit of zip, plus extra oregano and garlic powder but still disappointingly bland.

  6. This was delicious! I skipped the onion, drained the tomatoes, used two bags of angel hair shredded cabbage, and added a little more seasoning. Such a great recipe!

  7. My friend added sauerkraut in with her cabbage (about 30 years ago) and I have done it since. Adds a unique flavor and it gives a different spin on plain cabbage rolls. I really like it and so does my family.

  9. This was absolutely delish! I used ground turkey instead of hamburger meat and it still was good! Also added a smidge more seasonings and red pepper flakes. Sooo good!!!

  10. I used a can of diced tomatoes and tomato sauce. 1.5 lb ground beef a red onion and a full head of cabbage. I added lots of salt, pepper and Italian seasoning. This really tasted like American Goulash. The cabbage is a great sub for pasta. I ate it for dinner and two lunches. Loved it and will make again. Great comfort food on a low carb diet.
