Stuffed Cabbage Casserole Recipe in One Pot
I absolutely LOVE this casserole! Ever since I made this Easy Stuffed Cabbage Casserole this has been a regular type of meal at my house. I also have a Cabbage Roll Soup that I enjoy as well.
So naturally, now that I am eating low carb, I decided to create an Unstuffed Cabbage Casserole that is low carb and Keto friendly. I just make rice on the side for my daughter.
Is Cabbage Casserole Healthy
Yes! This hearty casserole is full of healthy veggies and lean protein. I think cabbage has been a super food before super foods were even a thing! You could also use ground turkey or chicken if you are avoiding beef.
I added an orange bell pepper to this recipe for flavor and color. If you are following a strict low carb diet feel free to omit the orange pepper. That will save you about 9 total carbs or 6 net carbs overall.
Is Cabbage Good For A Low Carb Diet
Yes! One cup of raw cabbage contains approximately 22 calories, 5 carbs and 2 grams of fiber. 3 net carbs.
That means that cabbage is most definitely Keto friendly and a great choice to fill up those vegetable carbs.

Ingredients Needed For Unstuffed Cabbage Casserole (screenshot for grocery list)
- Oil
- Ground Beef
- Sweet Onion
- Orange Bell Pepper
- Garlic
- Fire Roasted Diced Tomatoes
- Smoked Paprika
- Dried Oregano
- Garlic Powder
- Onion Powder
- Salt/Pepper
- Green Cabbage
- Shredded Cheddar/Jack Cheese
- Sauté oil, beef, onion and orange pepper over medium/high in large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.
- Add garlic and sauté 1 more minute.
- Stir in tomatoes, spices, salt and pepper. Top with cabbage. Cover and cook 15-20 minutes or until cabbage is tender.
- Top with cheese, cover until melted then serve.

- 1 Lb Ground Beef
- 1 Sweet Onion (chopped)
- 1 Orange Bell Pepper (seeded, chopped)
- 3 Garlic Cloves (chopped)
- 14 oz Can Fire Roasted Diced Tomatoes
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon Dried Oregano
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- Salt/Pepper (to taste)
- 1 Small Head Green Cabbage (cored, chopped)
- 2 Cups Shredded Cheddar/Jack Cheese
Instructions
- Saute oil, beef, onion and orange pepper over medium/high in large pan with high sides or a dutch oven. Cook until beef is browned and onions are translucent.

Very good, even if I left out the bell pepper ( did not have) and subbed brussels sprouts for the cabbage ( needed to use before they spoiled. Will make again for sure.

How would this dish freeze you think?
This can be frozen. It may get a bit more liquid-y when thawed and cooked. Not a deal breaker for me but something to keep in mind 🙂

We made this for dinner tonight and it Sold out!! My family isn’t a big fan of veggies, but they sure loved this one! I left the cheese out since we didn’t have any, and I don’t like driving in the rain and it was still delicious! Most likely I’ll make it again next week.

I’ve never tried it with sauerkraut so I can’t say for sure. I’m sure using a mix or sauerkraut and cabbage would work.

I estimated this to have 6 servings, so the nutritional info is per serving. But if you tend to eat small servings it may be less than the info listed 🙂

Did you drain the tomatoes before adding?
I always add the juice along with the tomatoes.
Made this dish for dinner tonight. I was so excited to try it. After everything was done I have to say I was sadly disappointed with the meal. Yes it is edible but there is no flavor to it. I will not serve this dish ever again.
Is the sugar content from the tomatoes? Also how much are you calculating in each portion?
Yes, the sugars are coming from the tomatoes, onions and peppers.
I never leave a comment on a recipe, but this one DESERVES recognition! I’m not doing Keto, just watching my carb intake. I love old fashion cabbage rolls my mom makes with ground beef and rice so it was a no-brainer for me to try this. Hands down one of my absolute favorite recipes of all time! I used ground turkey, and added a little more smoked paprika, but other than that, never changed one thing. It was so quick and easy! My mom used to put sauerkraut in between the cabbage rolls (halupki) when she made them. It was delicious
How much would a serving be in grams or cups?
If I was to use pre shredded cabbage, how many cups would that be?
Are the fire roasted tomatoes hot? Can I use something else?
This was good. I used Laura’s organic lowest fat beef to keep the saturated fat down. I also upped the spices as I thought it was a bit bland – added celery salt, caroway and several dollops of dijon mustard. I may add some mustard seed in the future as well. Thanks for the good fall recipe!
I made this yesterday and thought it was awesome but I altered it slightly.
I added fresh mushrooms,
Small can of tomato soup and a couple handfuls of chopped up bacon.
Once it was done and dished it up then I added the cheese and closed the lid.
The dishes I wouldn’t be eating right away I didn’t add cheese to them.
I also put some directly into 2 containers to freeze for later use.
I want to try chicken with it next time. Either chicken breast or some rotisserie chicken.
