The day after Thanksgiving and Christmas I am left wondering one thing . . . What the heck do I do with all of this leftover cranberry sauce?  It is difficult to make a small batch of homemade cranberry sauce.  A little bit of the remaining sauce gets used on turkey sandwiches.  But, I’m sorry to say that half of the batch usually gets thrown away.  Not this year, Christmas day I was thinking of ways to repurpose my leftover cranberry sauce.

Cranberry Smoothie

 
I came up with several recipe ideas.  Because I am totally burnt out on cooking at the moment, I decided to go with my Creamy Cranberry Smoothie idea.  Boy am I glad I chose the easy route because this smoothie is Awesome!  It has the Zing from the cranberry and the Cool Creaminess from the greek yogurt.Use whatever cranberry sauce that you make for the holidays.  I used my leftover Christmas cranberry sauce that was a blend of cranberry, orange, sugar and honey.  Or check out my Holiday Cranberry Apple Sauce Recipe.
 
Ingredient:1 cup Plain Greek Yogurt
1 cup Milk (I used coconut milk)
1 cup Leftover Cranberry SauceUsing a blender or hand-blender, puree all ingredients until smooth.  Depending on how tart your cranberry sauce is you may need to add a couple spoonfuls of sugar or honey.  Then it is smoothie time!  Drink your healthy treat and feel good about not wasting your delicious cranberry leftovers.  This will make one large smoothie or two small smoothies.

If you have cranberry sauce to use up after the holidays make yourself a cranberry sauce smoothie. It's sweet, tart and refreshing.

Ingredients

  • 1 cup Plain Greek Yogurt
  • 1 cup Milk (or coconut milk)
  • 1 cup Leftover Cranberry Sauce

Instructions

      That is an old GT’s Kombucha bottle. I just peeled off the label and reused it 😉

    This recipe and picture inspired cranberry ice cream. I added a cup of powdered sugar to this recipe and omitted the greek yogurt and added 2 cups of cream. Tossed it into my ice cream maker. Reminded us of strawberry ice cream.
