Leftover Prime Rib Sandwich Recipe

So you made a prime rib roast and are lucky enough to have leftovers, make this Leftover Prime Rib Sandwich Recipe. Thinly sliced prime rib, horseradish mayo, caramelized onions and fresh greens make this the ultimate sandwich experience. Great for lunch or dinner.

Ingredients

  • 1 Lb Leftover Prime Rib - sliced thin
  • 2 Ciabatta French or Sourdough Rolls
  • 1 Lb Sweet Onions
  • Oil
  • 1-2 Tablespoons Prepared Horseradish
  • 1/4 Cup Mayonnaise
  • Spring Mix Greens

Instructions

  • Thinly slice the prime rib, as close to shaved as possible. (I leave it cold. If preferred, heat quickly in a skillet just until warm.)
  • Mix mayo and horseradish.
  • If toasting bread, brush with oil from caramelized onions and toast in the oven.
  • Spread horseradish mayo onto top and bottom of rolls. Layer greens, prime rib, onions and more greens. Serve.
