This Cookie Monster inspired cake is super fun and will definitely be a show-stopper.

Recipe Tips:
- Blue gel food coloring is more concentrated and will require less dye, if using regular blue food coloring you may find that you’ll need an entire bottle to reach a deep shade of blue.
- For easy slices, dip your knife into warm water before cutting into the cake.
- Store leftover ice cream sandwich cake in an airtight container in the freezer for up to 1 week.
- Homemade whipped cream can be used but may not set up as nicely as store bought.

Equipment
Ingredients
- 24 ice cream sandwiches
- 16 oz frozen whipped cream topping thawed
- Blue gel food coloring*
- 12 chopped chocolate chip cookies used Chips Ahoy
- 12 chopped Oreo cookies
Instructions
- In a large mixing bowl, mix together the whipped topping and blue food coloring until you achieve your desired shade of blue.
- Unwrap and line 12 of the ice cream sandwiches into the bottom of a 9x13 pan (you may need to slice one or two sandwiches to fit all into the pan) .
- Spread half of the blue whipped cream topping over the ice cream sandwich layer.
- Sprinkle half of the chopped cookies and Oreos over the top of the whipped cream layer.
- Repeat the same steps with the remaining ingredients.
- Cover the dish loosely with foil and place into your freezer for 3-4 hours before serving.
- Slice in squares to serve.
