Baked potatoes filled with shredded buffalo sauce chicken, blue cheese crumbles and ranch sauce. These are the ultimate game-day food or just a fun, unique dinner idea.

Ingredient Options:

  • Use store bought rotisserie chicken to make this quick and easy.
  • Your preferred buffalo sauce will work.
  • If you don’t like blue cheese, use you favorite cheese instead or just omit the cheese.
  • I do not suggest storing these once assembled. You can make the baked potatoes in advance and assemble everything when you’re ready to serve. Store leftover ingredients separately.

Equipment

Ingredients

  • 3 Medium Russet Potatoes washed
  • 4 Tablespoons Melted Butter - divided
  • ¾ Cup Cooked Shredded Chicken heated
  • 3 Tablespoons Buffalo Sauce
  • 3 Tablespoons Chopped Green Onion
  • 3 Tablespoons Blue Cheese Crumbles
  • Ranch Dressing
  • Salt/Pepper - to taste

Instructions

  • Preheat the oven to 450ºF.
  • Using a fork, poke holes through washed potatoes.
  • Place the potatoes on a standard baking sheet with a rack over the top of it and use a basting brush to coat them with melted butter.
    Sprinkle each potato with a bit of salt and pepper.
  • Bake for 55 minutes or until fork tender.
  • In a small bowl, mix together the shredded chicken and buffalo sauce.
  • Split your potatoes and baste the inside with leftover melted butter.
  • Sprinkle the insides of the potatoes with salt and pepper.
  • Place about ¼ cup of the chicken mixture into each potato.
  • Drizzle with extra buffalo sauce, if desired, then drizzle with ranch dressing.
