Baileys S’mores Dessert

This easy Baileys Smores Dessert is great for a summer evening treat. Layers of graham crackers, marshmallows, chocolate syrup and Baileys Irish Cream. Add ice cream for an epic S’mores Ice Cream Sundae.

BOOZY S’MORES RECIPE

S’mores campfire goodness right from the kitchen, with a little hint of Baileys Irish Cream. This dessert is sure to be a crowd pleaser all year-round.

BAILEY’S OPTIONS:

To make a weaker version use half the amount of Baileys, so ½ an ounce per serving instead of 1 ounce. Another option would be to mix some chocolate syrup into the Baileys before adding.

What Are The Best Marshmallows For S’mores?

Using a quality, gooey marshmallow will give you the best results. Jet-Puffed marshmallows by Kraft are my recommendation, if available.

INGREDIENT OPTIONS:

Use chocolate milk syrup or hot fudge sundae syrup.

Large marshmallows can be used in place of mini marshmallows. Or for an ooey-gooey version, use marshmallow fluff.

For a non-alcoholic version use sweet cream coffee creamer or vanilla ice cream.

MAKE THIS A SUNDAE OR MILKSHAKE:

Blend vanilla ice cream and milk to add for a milkshake version.

Or start with a scoop of vanilla ice cream and pile the S’mores ingredients on top.

Ingredients

  • 8 Graham Crackers crushed & divided
  • 4 cups mini marshmallows or more
  • Chocolate syrup
  • 4 ounces Baileys Irish Cream
  • Garnishes:
  • large marshmallows

Instructions

  • Using 8-ounce glasses or mason jars, layer crushed graham crackers in the bottom of each, followed by a layer of mini marshmallows (½ cup or more), sprinkle a light layer of crushed graham cracker on top.
  • Drizzle with as much chocolate syrup as desired.
  • Top with another handful of mini or large marshmallows and brown with a kitchen torch. Alternatively, you can put the marshmallows in the oven on parchment or foil paper set to broil just until they start to brown and then carefully transfer them to the glass once cooled. Pro Tip: Spray with a non-stock cooking spray on the sheet first to transfer them easy and allow the oven to get quite hot so they brown before they melt.
  • Pour 1 ounce of Baileys Irish Cream into each glass.
  • Add another drizzle of chocolate syrup if desired.
