Shrimp Salad Recipe

This is my favorite type of dish to eat. Fresh, flavorful, colorful with lots of different textures. And it just so happens to be low carb. Bonus!

I use vine ripe tomatoes but feel free to use Roma or cherry tomatoes. I love cilantro but you can use parsley instead and it tastes just as great. This dressing is quite simple to allow all the ingredients to shine.

  • Large Deveined Shrimp
  • Avocados
  • Vine Ripe Tomatoes
  • Parsley or Cilantro
  • Olive Oil
  • Lime
  • Garlic
  • Salt/Pepper

How To Make Tomato Avocado Shrimp Salad

  1. Cook shrimp. I prefer to boil the shrimp until pink and in a ‘C’ shape. Cut into bite sized pieces.
  2. Combine shrimp, avocado, tomatoes and parsley or cilantro.
  3. Whisk together olive oil, lime juice, garlic, salt and pepper.
  4. Toss shrimp avocado mixture in dressing being careful not to break up the avocados too much.
  5. Taste and add salt and pepper to preference.

Ingredients

  • 2 Lbs Large Deveined Shelled Shrimp
  • 2 Avocados - seeds removed chopped
  • 1 Lb Vine Ripe Tomatoes - chopped
  • Handful Parsley or Cilantro - finely chopped
  • 3 Tablespoons Olive Oil
  • Juice of 1 Large Lime or 2 small limes
  • 1 Garlic Clove - grated
  • Generous Pinch Salt/Pepper

  1. I am not allowed to eat tomatoes due to an intestinal surgery. All other ingredients are fine. Is there anything you suggest that would be a good replacement for the tomatoes?
