Which Is Better, Hot Or Cold Lobster Rolls?
Most people think of the cold creamy mayo based version when they think of lobster rolls. But the warm butter slathered lobster rolls are far superior, in my humble opinion.
To make these lobster rolls we are tossing the freshly cooked chunks of lobster meat with melted butter (the poaching butter if that is how you cooked it), lemon, fresh chives and dill. Salt and pepper to taste and that is it.
I figure if I’m paying $50 a pound for something I am certainly not going to cover the flavor with a bunch of other ingredients. But that’s just my personal opinion and I will eventually add a mayo based lobster roll to the site for those that love that version.
What Makes a Connecticut Lobster Roll Different?
- Connecticut Style: Warm lobster meat tossed in melted butter
- Maine Style: Chilled lobster meat mixed with mayonnaise
While the Maine version emphasizes creamy texture, Connecticut’s approach is all about enhancing the natural sweetness of fresh lobster with warm, drawn butter.
The Warm Connecticut Lobster Roll is proof that great food doesn’t need to be complicated. With just lobster, butter, and bread, this coastal classic from Connecticut continues to win over seafood lovers across the country. Whether enjoyed seaside in New England or recreated in your own kitchen, it delivers comfort, tradition, and pure lobster flavor in every bite.

Yes. The defining feature of this style is that the lobster meat is warmed in butter before being placed in the bun.
Typically, fresh Atlantic lobster (often sourced from New England waters) is used. Claw and knuckle meat are favored for tenderness and flavor.
A split-top New England–style hot dog bun is traditional because it toasts evenly and holds the lobster securely.
