Homemade Blueberry Waffles – Low Carb

If you are craving a sweeter breakfast, make these Keto Blueberry Waffles. You can still enjoy meals that would traditionally be all carbs but made to fit into a low carb diet.

Drizzle these waffles with low carb syrup, sprinkle with Monkfruit powdered sugar or top with whipped cream.

I feel I do need to warn you that cleaning your waffle iron after making these will be a chore. I suggest cleaning as soon as the waffle iron cools down.

Are Blueberries Keto Friendly

Yes, small servings of blueberries are okay on the Keto Diet. You don’t want to go crazy with your portions though.

These waffles are great because they require a small amount of blueberries to add that blueberry flavor.

Ingredients Needed For Low Carb Blueberry Waffles (screenshot for grocery list)

  • Cream Cheese
  • Mozzarella
  • Egg
  • Vanilla Extract
  • Coconut Flour
  • Monkfruit Sweetener
  • Salt
  • Blueberries

How To Make Keto Blueberry Waffles

  1. Preheat mini waffle iron.
  2. In glass measuring cup or bowl, microwave cream cheese and mozzarella for 10 seconds. Stir to combine, the mozzarella should partially melt into the cream cheese.
  3. Add in egg and vanilla. Stir vigorously with a fork until combined.
  4. Stir in coconut flour, salt and sweetener.
  5. Stir in blueberries.
  6. Grease waffle iron with oil or nonstick spray. (I prefer using oil)
  7. Pour half of the batter onto waffle iron and close lid.
  8. Allow chaffle to cook for 4-5 minutes. Remove from waffle iron.
  9. Grease waffle iron and pour the remaining batter onto waffle iron. Cook 4-5 minutes.
  10. Serve with low carb syrup, Monkfruit powdered sugar and/or whipped cream.
