These Copycat McGriddles are great for saving money and eating a healthier version of a fast food favorite. Or if you are like me and can never seem to make it to the drive-thru during breakfast hours – just make your McGriddles at home.

I’m not sure if my tastes have changed or fast food has changed, but I remember fast food tasting a lot better when I was younger. Making it at home you can guarantee it will taste great!

Ingredients

  • Pancake mix enough for 8 pancakes
  • Eggs and milk pancake mix calls for
  • ¼ cup maple syrup
  • 8 eggs
  • 4 cooked sausage patties
  • 4 slices American cheese

Instructions

  • Make your pancake mix according to box directions and whisk in the maple syrup. Make 8 pancakes.
  • Make your eggs one sandwich at a time - Whisk 2 eggs until combined. Spray a medium non-stick skillet. On low heat add your 2 beaten eggs. Let the eggs fill the bottom of the pan.
    Once the eggs are just about cooked run your spatula around the edge to loosen them.
    Fold one side of the egg to the middle and repeat with the other side. Next fold the short end to the middle and repeat with the other side.
  • Assemble your sandwich. Place down a pancake, slice of cheese, warm egg then cooked warm sausage. Repeat with the other sandwiches.

Notes

Homemade pancakes can be used as well.
Save time and use maple flavored frozen pancakes.
Switch out the sausage for bacon if you prefer.
