This pasta salad is prefect for parties, bbq’s or as a light summertime meal. Fresh veggies, small orzo pasta, feta cheese all tossed in a tangy vinaigrette.

INGREDIENT OPTIONS:

  • The orzo can be switched with your favorite pasta – preferably a small sized pasta.
  • Add more or less olives, peppers, onions, cucumbers and spinach to fit your tastes.
  • The dressing can be swapped with a store bought greek or Italian dressing.

Ingredients

  • 16 ounces orzo pasta
  • 2 cups baby spinach leaves
  • 1 large red bell pepper chopped
  • ½ large red onion chopped
  • 1 cucumber seeded and diced
  • 5 ounces Castelvetrano green olives halved
  • 5 ounces Kalamata pitted olives halved
  • 7 ounces feta cheese crumbled
  • ½ cup olive oil +more for drizzling
  • 1 large lemon juiced
  • 1 ½ teaspoons Italian seasoning
  • pinch sea salt
  • 1 teaspoon black pepper

Instructions

  • Cook orzo according to package instructions - slightly al dente.
  • Drain the cooked orzo and allow to cool.
  • To make the vinaigrette, mix the olive oil, juice of a lemon, Italian seasoning, sea salt, and pepper in a small bowl.
  • In a separate large bowl combine orzo, spinach leaves, chopped bell pepper, chopped onion, diced cucumber, Castelventrano olives, Kalamata olives, and feta cheese.
  • Drizzle vinaigrette over pasta then toss to thoroughly combine.
    Allow the pasta salad to chill in the refrigerator for 1-2 hours (the longer the better). Drizzle with additional olive oil before serving.
