BACON LETTUCE TOMATO PASTA SALAD

This pasta salad with a twist comes together easily and will be a hit at parties, potlucks and barbecues. Pasta, bacon, lettuce, tomato and onion tossed in a creamy avocado dressing makes for a colorful and flavorful side dish.

INGREDIENT OPTIONS:

Grape or cherry tomatoes work best because they will not add a lot of extra liquid to the pasta salad. Any tomatoes you have on hand will work though.

Use your preferred pasta. This pasta salad works best with sturdy pasta noodles.

Iceberg lettuce can be used instead of romaine.

Store pasta salad in an airtight container in the refrigerator. Use within 2-3 days. The pasta salad will keep longer if you leave the tomatoes whole.

Ingredients

  • AVOCADO DRESSING:
  • 1 avocado pit and skin removed
  • Juice from 1 lemon
  • 1 Tablespoon apple cider vinegar
  • 1 Garlic clove
  • 6 Tablespoons olive oil
  • 6 Tablespoons sour cream
  • ½ Teaspoon salt
  • ½ Teaspoon pepper
  • 1 teaspoon dried dill
  • 4-6 Tablespoons water to thin it out to desired consistency
  • PASTA SALAD:
  • 1 lb tri-color rotini pasta cooked according to package instructions
  • 1 lb bacon cooked and chopped
  • 1 pint grape tomatoes halved
  • 1 cup shredded romaine lettuce
  • ½ red onion diced
  • ¼ cup grated parmesan cheese

Instructions

  • DRESSING: In a blender or food processor add all the ingredients and blend until smooth. Add the water a little at a time to thin out. Store in an airtight container and place in the refrigerator.
  • PASTA SALAD: In a large mixing bowl add all the ingredients besides the parmesan and toss. Add half the avocado dressing and parmesan cheese and mix until thoroughly combined. Cover and refrigerate for at least 1 hour. When ready to serve, mix in the rest of the avocado dressing.
