Cucumber Mojito Recipe

A Cucumber Mojito has to be one of the most refreshing cocktails. A blend of mint, lime and cucumber make this rum drink extra flavorful.

MOJITO COCKTAIL RECIPE

A mojito is a classic drink, perfect for summer, or anytime you’re looking for a light and refreshing bubbly cocktail. Cucumber adds a subtle earthiness, and makes it even more crisp and flavorful. All you need is mint, cucumber, lime, sugar, rum, and club soda.

SWEETENER OPTIONS:

If you have simple syrup on hand, you can add ½ to 1 ounce of that in place of the sugar, depending on how sweet you like it.

CUCUMBER OPTIONS:

English cucumbers have very few, tiny seeds and are said to be “burpless,” so they are a great choice for cocktails. Salad cucumbers will work too if that’s what you have on hand.

No cucumber on hand? You can leave it out and this recipe will be perfect. Don’t skip the mint though, then it’s just a rum and tonic.

ALCOHOL OPTIONS:

This recipe was developed using Bacardi Superior white rum, but any white rum will work!

Don’t like rum? Try it with vodka! I like Tito’s or Grey Goose.

SODA OPTIONS:

Club soda is sweeter, while tonic water is more bitter. Both work really well for mojitos, you can’t go wrong! San Pellegrino sparkling water also works really well.

FRUIT OPTIONS:

Try adding blueberries, strawberries, or raspberries in place of the cucumber.

TIPS AND TRICKS:

To make this a virgin drink, just omit the rum. Hello sparkling mint limeade!

If you’d like your mojito less sweet, use 1 tablespoon sugar, or add another squeeze of lime juice. Play around with it until you find the combo you like best.

Roll the mint leaves in your hand briefly before adding them to the glass of crushed ice. This bruises the mint and releases it’s oils, making it more aromatic. You can also tear them in half and drop them in.

CUCUMBER MOJITO RECIPE

Ingredients

  • 6 fresh mint leaves
  • 2 tablespoon white sugar
  • Juice from ¼ of a lime
  • Sliced English cucumber
  • 2 ounces white rum
  • Crushed ice
  • Club soda or tonic water
  • Mint leaves cucumber and lime wheels for garnish

Instructions

  • Add mint leaves and sugar to a cocktail shaker. Muddle with a muddler or a spoon until mint is bruised and starting to break up.
  • Add lime juice, a wheel of cucumber, rum, and ½ cup of ice to the cocktail shaker, shake vigorously until sugar is dissolved.
  • Fill a highball glass to the top with crushed ice, add a few more mint leaves, a lime wheel, and a cucumber slice.
  • Strain the mixture in the cocktail shaker into the glass. Top with club soda or tonic water. Garnish with lime wheel, cucumber slice, and a few mint leaves. Enjoy!

Notes

To make this in a glass: muddle the mint and sugar with a cucumber slice, add in some ice, add the rum, add a bit of club soda and stir vigorously, top off with more ice and more club soda.
