Broccoli Cheese Rice Casserole is a super quick and easy 30 minute dinner recipe that the entire family will enjoy. Broccoli and rice are combined with a creamy sauce and lots of cheese to make this meal extra satisfying. Great for Meatless Monday or even as a side dish.

Broccoli Cheese Rice Casserole Without Soup

I’m just gonna say it. . . I’m not a fan of ‘cream of whatever’ soups. I grew up in the 80’s so my childhood was filled with canned soup casseroles. But I like to have the least amount of ingredients in my recipes, keep it simple.

This Broccoli Cheese Rice Casserole is made from scratch. Just because this casserole is made from scratch does not mean it is complicated. The creamy sauce is a simple blend of cream cheese and milk, no thickening of the sauce required.

We are using Earthbound Farm Frozen Organic Broccoli because not only is it nutritious, high quality and sustainable, convenient too!

I use a lot of frozen fruits and vegetables because it reduces food waste. I just hate throwing away produce that I didn’t use in time. That’s what’s great about frozen produce, it is ready and waiting for you.

April is Earth Month! What better time to make a conscious effort to improve your sustainability habits. I know it can be overwhelming to wrap your brain around what sustainability really means. While we all would love to make giant changes that instantly improve our environment, the reality is, it’s the small changes that add up to make the big impacts. And if we all committed to making small daily changes imagine what that would add up to.

Here are a few ideas to get you started on thinking (and cooking) with a healthy Earth in mind:

Buy USDA Organic Products: These products are made with practices that promote ecological balance and conserve biodiversity. Organic food is good for us and the planet.

Ditch The Disposables: This one is difficult for me too. But we need to stop using disposable plates, napkins and cups. We just do. And along with that, look for products that come in minimal packaging or packaging that is recyclable.

Turn Off The Water And Lights: Yeah, yeah. Mom and Dad yelling at you about the power/water bill did get tiresome but they were right. Perhaps their reasoning was financially motivated but still, they were right. Not only does reducing your water and power consumption save you money, it saves the planet too. Thanks Mom and Dad.

  • Brown or White Rice – cooked
  • Earthbound Farm Frozen Organic Broccoli – thawed/drained
  • Cream Cheese
  • Whole Milk
  • Dijon Mustard
  • Garlic Powder
  • Shredded Colby Jack Cheese

How To Make Cheesy Broccoli Rice Casserole

  1. Cook rice according to package instructions.
  2. Preheat oven to 375ºF
  3. Combine rice, broccoli and 1 cup shredded cheese in large bowl.
  4. Combine cream cheese and milk. Microwave 60-90 seconds, until mixture can be stirred smooth. Add mustard, garlic powder, salt and pepper.
  5. Pour sauce mixture over broccoli and rice. Stir until evenly coated then transfer to a 3.5 qt greased casserole dish.
  6. Top with remaining cheese then bake uncovered for 20 minutes. Broil on high 4-5 minutes to brown top. Serve.

  2. I really want to try this. My family doesn’t like broccoli a whole lot, so do you think I could substitute cauliflower? I might just do the broccoli and make them eat it, anyway :)!
