STRAWBERRY TANGHULU or Candied Strawberries are skewered strawberries dipped in a clear hardened crisp sugar coating.

Strawberry Tanghulu is having a moment on TikTok. It is inspired by a sweet street food snack sold in China, Japan and Korea.
Basically this is strawberries dipped in sugar syrup that will harden into a crisp sugar shell.

- Make the sugar coating as thick or thin as you prefer.
- If your sugar coating isn’t hardening make sure the sugar syrup is at the correct temp.
- The sugar dipped strawberries can be transferred to parchment paper to harden or quickly dipped in ice water.

Ingredients
- 10-12 large fresh strawberries
- 1 cup sugar
- 1/2 cup water
- Wooden skewers
Instructions
- Wash and dry the strawberries, leaving the stems intact. Skewer 2-3 strawberries on each wooden skewer.
- In a small saucepan, combine the sugar and water. Cook over medium heat, stirring occasionally, until the mixture reaches 300°F on a candy thermometer (hard crack stage).
- Remove from heat and allow to cool slightly.
- Dip each skewered strawberry into the hot sugar mixture, coating it thoroughly. Allow any excess sugar to drip off.
- Immediately transfer strawberries to parchment paper to harden or dip the coated strawberries into an ice water bath to cool and harden the sugar coating immediately then pat dry.
- Serve the strawberry tangulu skewers chilled and crispy.
