Shrimp Stuffed Salmon
Ingredients
- 1 tbsp olive oil
- 2 8 oz salmon filets
- 1 tbsp minced garlic
- 8 oz raw shrimp no tails
- 1/3 cup mayonnaise
- 1/4 cup Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt/pepper
Instructions
- Preheat oven to 350ºF. In a medium skillet over medium heat, heat olive oil.
- When oil is heated, add shrimp and garlic.
- Stir often, being sure not to burn the garlic.
- Cook until shrimp is just cooked through. Remove from heat.
- Stir in mayonnaise, Parmesan cheese, and mozzarella cheese.
- Place salmon filets on a baking sheet lined with parchment paper.
- Using a sharp knife, cut each filet horizontally, creating a pocket for the stuffing. Be surenot to cut all the way through the filet.
- Stuff each filet with stuffing. Save some to add to the top at the end of baking.
- Salt and pepper each filet.
- Bake for 20 minutes.
- Remove from oven and add remaining stuffing to the top of each filet.
- Broil for 5 minutes or until golden brown.
