Cold Asparagus Salad – Shaved

This is one of those super simple recipes that will get you some oohs & ahhs. No need to even turn on your oven or stove, this asparagus salad is raw.

If you’ve never shaved asparagus into ribbons don’t worry. By the second asparagus spear you’ll have it down. Once the asparagus is shaved into ribbons it’s just a matter of tossing the ingredients together and serving.

This asparagus salad is bright, fresh and so flavorful. The perfect Spring or Summer side dish.

How Do You Shave Asparagus For Salad

I have this handy Vegetable Peeler – Cheese Slicer that I use for so many things. It works great to create asparagus ribbons.

Do not trim the bottoms as you normally would. Use one hand to hold the end of the asparagus spear while holding the veggie peeler in the other hand lightly pulling straight down to the tip. Try to do this gently to achieve those nice swirly asparagus ribbons. Discard the ends.

  • Asparagus (thick stalks)
  • Lemon
  • Oil (olive, avocado or algae oil)
  • Salt/Pepper

How To Make Shaved Lemon Asparagus Salad

  1. Wash asparagus, do not trim the bottoms as you normally would. Use one hand to hold the end of the asparagus spear while holding the veggie peeler in the other hand lightly pulling straight down to the tip. Try to do this gently to achieve those nice swirly asparagus ribbons. Discard the ends.
  2. Combine asparagus ribbons with lemon juice, lemon zest, oil, salt and pepper.
  3. Gently toss to combine. Let sit 5- 10 minutes then serve.
