Mini Cereal Pancakes – TikTok Recipe

Apparently these Mini Cereal Pancakes had a moment on TikTok back in 2020. I’m a 40 something out of touch lady, so that would be why I’m so late on this viral trend 😆

Better late than never, right?

I can see why they are so popular. Who doesn’t love cute food, especially delicious cute food? And these are as easy as making regular pancakes, just on a smaller scale.

These super mini pancakes would be perfect for surprising your kids with or even mom on Mother’s Day.

Pancake Cereal Ingredients (screenshot for grocery list)

  • Flour
  • Baking Powder
  • Milk
  • Egg
  • Vanilla Extract
  • Butter

How To Make Cereal Size Mini Pancakes

  1. Add the flour and baking powder to a large mixing bowl. Use a whisk to combine.
  2. In a separate bowl, whisk together the eggs, vanilla extract, and milk until fully combined.
  3. Slowly pour the wet ingredients into the dry ingredients beating as you go. Continue to beat the ingredients together until you have a smooth batter without any lumps.
  4. Add the pancake batter to a piping bag and snip a very small hole from the end with a pair of scissors.
  5. Heat a non stick pan or griddle over a low-medium heat. If your pan isn’t non-stick add a small amount of butter first and melt it.
  6. Pipe tiny circles into the pan. It’s easier to work in batches so don’t pipe all the batter at once.
  7. After about 30 seconds you will see bubbles appear on the surface of the pancake batter, flip them over and cook for a further 20-30 seconds on the other side.
  8. Transfer to a plate and repeat with the rest of the pancake batter. When you’ve finished making all of the pancake cereal you can tip all of the pancake cereal into the pan to reheat.
  9. Serve with maple syrup, honey, fruit, Nutella or yogurt.

Tips For Making Cereal Mini Pancakes

  • Make sure you only cut a very small hole in the piping bag so that the batter can’t run out and it’s easy to control the flow.
  • If you don’t have a piping bag you can add the batter to a squeezable plastic bottle or ziploc baggie. Or, you can dollop the batter into the pan using a teaspoon.
  • If you want your pancake cereal to brown with crisp edges you will need to use butter in your pan or griddle.
  • Making pancake cereal is more time consuming than making regular pancakes but this batter is very forgiving. If your pan is getting too hot when you pipe in the batter you can remove it from the heat to pipe the batter.
  • You will need to move fairly quickly to flip the pancakes when the bubbles appear but don’t rush as the batter is very unlikely to burn (unless your pan is too hot).
  • You can use two teaspoons to flip the tiny pancakes over or a small palette knife also works well.
