Ingredients

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons unsalted butter softened
  • 1 tablespoon Dijon mustard
  • 1 teaspoon pickle juice
  • Salt and pepper to taste
  • Paprika for garnish
  • Fresh chives finely chopped, for garnish

Instructions

  • Hard boil the eggs using your preferred method. Here is the method I use: How To Make Perfect Hard Boiled Eggs
  • Peel the eggs and cut them in half lengthwise. Remove yolks and place them in a bowl. Set egg whites aside.
  • Mash the egg yolks with a fork, then add mayonnaise, softened butter, Dijon mustard, pickle juice, salt, and pepper. Mix until smooth and creamy.
  • Spoon or pipe the yolk mixture into the egg whites, creating a generous filling in each half.
  • Garnish each deviled egg with a sprinkle of paprika and a pinch of chopped chives.
  • Refrigerate for at least 1 hour before serving to allow the flavors to meld and yolk filling to firm.
