Glazed Citrus Doodle Cookies
Ever wonder what would happen if a snickerdoodle and a sugar cookie had a citrus flavored baby? Wonder no longer … the cookie love child would be this Zesty Glazed Citrus Doodle! The consistency is soft and buttery like a snickerdoodle with a flavor reminiscent of a sugar cookie. Add the tanginess of the lemon and orange for pure cookie perfection.
I discovered this recipe while flipping through EveryDay Food Magazine and knew I had to make a batch. I made some minor changes to the cookie recipe and mixed my own variation of a citrus glaze. To give the cookies and glaze more zazaZing, I added extra citrus juice and zest.
Citrus Doodles with Zesty Glaze
(adapted from EveryDay Food)Cookie Ingredients:2 3/4 cups all purpose Flour
1 Tb Baking Powder
1/4 tsp Salt
1 1/2 cups Sugar
2 Eggs
1 Tb fresh Lemon Juice
1 Tb fresh Orange Juice
Zest of 1 Lemon & 1 Orange
2 sticks Unsalted Butter (room temperature)

2 Eggs
1 Tb fresh Lemon Juice
1 Tb fresh Orange Juice
Zest of 1 Lemon & 1 Orange
2 sticks Unsalted Butter (room temperature)
Preheat oven to 350 degrees. With a fork, mix flour, baking powder and salt then set aside. Using a hand mixer, combine butter, sugar, orange/lemon zest and orange/lemon juice. Mix until creamy and smooth. Incorporate the eggs one at a time. Add the dry flour mixture and mix until fully incorporated.Roll dough into one inch balls and place two inches apart on a greased cookie sheet. Bake for twelve to fifteen minutes then remove and cool for five minutes. Transfer to wire racks for cooling and glazing.
Zesty Glaze:Whisk together the juice of half of an orange, juice from one and a half lemons, the zest of one lemon & one orange and approximately two and a half cups of powdered sugar. This glaze will be thin and will lightly coat the cookies. If you prefer a thicker glaze just add more powdered sugar until the desired consistency.
Once the cookies have cooled for about ten minutes, drizzle the glaze over the top. Be sure to spoon a few pieces of zest onto each cookie so they look extra fancy. Let the glaze set for ten to fifteen minutes then start munching.These cookies are best if eaten within the first few hours. While still perfectly tasty the next day, they do lose a little softness and zip. Also, be aware that this recipe makes 48 cookies. I was not prepared for that amount, much to the enjoyment of my family and friends. I was handing out cookies left and right! If like me, you do not want or need four dozen cookies hanging around, be sure to decrease this recipe by half.
