Thanksgiving Leftover Sandwich

So Thanksgiving is officially done and you have leftovers piled up in your refrigerator. There are so many different ways to use leftover turkey, in fact, check out this roundup of 30+ Leftover Turkey Recipes.

I am a purist and prefer to keep it simple with a Turkey Cranberry Sandwich the day after Thanksgiving. Honestly I think I enjoy the sandwich more than the holiday feast.

Ingredients Needed For Leftover Turkey Cranberry Sandwiches

  • Get a nice thick hearty sliced bread for these sandwiches. I like a nut seed bread or sour dough slice.
  • Slice up that leftover turkey, try to get semi thin even slices. Here are my favorite ways to roast turkey to begin with: Oven Roasted Turkey BreastAir Fryer Turkey Breast

  • Use your favorite lettuce or greens.
  • The cheese is completely up to your preferences as well. I like mild sliced cheese on my sandwiches. Havarti is my favorite so that is what I use.
  • Use plain mayo if you like or even whipped cream cheese is great for a more indulgent flavor combo. I add the spices and chives to the mayo just to zhoosh it up a bit. But it’s not necessary.

Ingredients

  • 2 Slices Nutty Bread
  • 3 Tablespoons Mayonaise
  • Pinch Poultry Seasoning
  • Salt/Pepper
  • 1 Tablespoon Chopped Chives
  • Green Leaf Lettuce
  • 1/2 Lb Sliced Leftover Turkey
  • 1/4 Cup Cranberry Sauce

Instructions

  • Mix mayo, poultry season, chives, salt and pepper.
