Okay, so it is no secret that I love anything with the jalapeno popper combination. And so do all of you apparently. Here is another fun and tasty way to enjoy your favorite flavor combo – Jalapeno Popper Potato Salad.
Basic potato salad with the addition of cheddar, bacon and jalapeños. This is just soooo much better that regular potato salad, which I also love. It’s a nice change and will be a stand out at any party, barbecue or potluck.

INGREDIENT OPTIONS:
- Feel free to use russet potatoes if you prefer.
- Increase or decrease the amounts of bacon, cheese and jalapeños to fit your tastes.
- Turkey bacon can be used.
RECIPE TIPS:
- This salad will stay fresh in an airtight container in the fridge for up to 4 days. It is not recommended to freeze this potato salad.
- You can easily double this recipe and make it for a potluck or backyard BBQ.
OPTIONAL ADD-INS:
- Dry ranch seasoning packet, red pepper flakes, or cajun seasoning.
- Red wine vinegar or apple cider vinegar instead of jarred jalapenos.
- Garnish with chopped chives, green onions, parsley, cilantro, or dill.
- Finely diced red onion, shallots, chopped hard-boiled eggs, celery, and hot sauce.

JALAPENO POPPER POTATO SALAD
Ingredients
- DRESSING:
- ¾ cup mayonnaise
- 2 tablespoons jarred or canned diced jalapeños with juices
- 1 teaspoon garlic powder
- ½ teaspoon Kosher salt
- ½ teaspoon freshly cracked black pepper
- POTATO SALAD:
- 2 ½ pounds Yukon Gold potatoes peeled, boiled and cut into bite-size pieces
- 8 slices bacon cooked and diced
- 2 cups shredded sharp cheddar cheese
- 1 fresh jalapeño thinly sliced for serving (optional)
Instructions
- Whisk together the mayonnaise, diced jalapenos with juices, garlic powder, salt, and pepper in a medium bowl.
- In a large bowl, combine slightly cooled potatoes, bacon, cheddar cheese, and dressing. Toss to combine.
- Garnish with fresh jalapeno slices and serve immediately, or cover with plastic wrap and chill in the fridge until ready to serve.
