Ingredients

  • DRESSING:
  • ¾ cup mayonnaise
  • 2 tablespoons jarred or canned diced jalapeños with juices
  • 1 teaspoon garlic powder
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly cracked black pepper
  • POTATO SALAD:
  • 2 ½ pounds Yukon Gold potatoes peeled, boiled and cut into bite-size pieces
  • 8 slices bacon cooked and diced
  • 2 cups shredded sharp cheddar cheese
  • 1 fresh jalapeño thinly sliced for serving (optional)

Instructions

  • Whisk together the mayonnaise, diced jalapenos with juices, garlic powder, salt, and pepper in a medium bowl.
  • In a large bowl, combine slightly cooled potatoes, bacon, cheddar cheese, and dressing. Toss to combine.
  • Garnish with fresh jalapeno slices and serve immediately, or cover with plastic wrap and chill in the fridge until ready to serve.
