What kind of food coloring should I use?

Oil based food coloring is strongly recommended over liquid food coloring. It provides more vibrant color without adding excess moisture that can affect the fudge’s texture. Start with 1/4 teaspoon and add more gradually until you achieve that perfect Grinch green.

How long does Grinch fudge last?

When stored properly in an airtight container at room temperature, Grinch fudge lasts 1-2 weeks. Refrigerated, it can last up to 3 weeks.

Where can I find red gumdrops?

Look for them in the candy aisle of grocery stores (especially during the holiday season), craft stores like Michael’s or Hobby Lobby, online retailers like Amazon, or specialty baking supply stores.

Can I make this ahead of time?

Grinch fudge is an excellent make-ahead treat. Prepare it up to 2 days in advance and store it in an airtight container. It’s also a great option for holiday cookie exchanges or gift-giving.

How do I get clean cuts?

Use a large, sharp knife and wipe it clean with a damp cloth between each cut. You can also run the knife under hot water, dry it quickly, and then cut—the warm blade slices through the fudge more easily.

Ingredients

  • 1 16 Ounce Bag Mini Marshmallows
  • 1 ¾ Cup White Chocolate Chips
  • 1 Cup Red Gumdrops quartered
  • 2 Tablespoons Unsalted Butter
  • ¼ Teaspoon Green Oil-Based Food Coloring

Instructions

  • Quarter gumdrops before beginning. Next, line an 8×8 baking pan with parchment paper and very lightly spray the parchment paper with nonstick cooking. Set aside.
  • Place the white chocolate chips in a medium mixing bowl. Microwave on high for 2 minutes, pausing every 30 seconds to stir the chips whether they’re melted or not to prevent burning.
  • Once the chocolate is smooth with no lumps, set aside.
  • Immediately add the marshmallows and butter to a large mixing bowl (if your butter is from a stick, make sure it’s at least in two pieces and not one large one for better melting).
  • Microwave on high for 2 minutes. Stop and stir and place back in the microwave for 30 seconds and stir until the butter is fully melted and mixed in.
  • Add the green dye to the marshmallow mixture and stir until no more color streaks appear. If you would like a bit more color, add more dye a bit at a time. Each brand is different, so ¼ teaspoon is just a starting point.
  • Add the chocolate on top of the marshmallow mixture and stir well.
  • Add ¾ of the quartered gumdrops to the mixture and fold in.
  • Microwave for 15-30 seconds, stir well.
  • Quickly pour the mixture into the prepared pan and spread evenly.
  • Lightly press the remaining gumdrop quarters onto the top.
  • Cover and refrigerate overnight, or for about 8 hours.
  • Slice into ½-inch squares.

Notes

Oil-based food coloring is necessary for this recipe. Water-based dyes will seize the chocolate.
