CILANTRO LIME CHICKEN
This marinade is a great way to bring loads of flavor to plain old chicken. Serve your chicken over rice, salad, pasta or veggies for healthy dinner.
INGREDIENT OPTIONS:
- Adjust the spices and amount of cilantro to fit your preferences.
- The fresh ginger adds some heat and flavor in the background, it is optional.
HOW LONG CAN YOU MARINATE CHICKEN IN LIME JUICE?
You can marinate chicken in citrus for 12 hours but I never go more than 2 hours. I think it affects the texture of the chicken in a way I do not like. So I always recommend marinating at least 30 minutes but no longer than 4 hours.

CILANTRO LIME CHICKEN MARINADE

Ingredients
- 1 cup fresh cilantro
- 1 tsp lime zest
- ⅓ cup lime juice
- 3 garlic cloves
- 1 tsp salt
- ½ tsp ground black pepper
- 3 tbsp olive oil
- 1 tsp fresh ginger grated
- 1 tsp chili powder
- 1 tsp cumin
Instructions
- Place fresh cilantro, lime zest, lime juice, garlic cloves, salt, black pepper, olive oil, grated ginger, chili powder, and cumin in a blender or small food processor. Pulse to combine ingredients into a sauce.
- Place chicken in a large bowl and add the marinade. Toss to coat. Cover with plastic wrap and refrigerate for 30 minutes to 2 hours.
- Grill, fry or roast chicken until internal temp reaches 165ºF.
