This dish will bring a bit of spice to your dinner rotation. It is a simple blend of shrimp, rice, peppers, onions, Cajun seasoning and Fire Roasted Diced Tomatoes.

Easy Cajun-Style Shrimp and Rice Casserole

This recipe comes together with a few simple steps. Just sauté the onion, peppers, and celery. Prepare your rice according to package instructions. Mix it all up, then bake until the shrimp are cooked through.

The quick and easy preparation makes this the perfect weeknight dinner.

  • Peeled Deveined Shrimp (31-40 count)
  • Rice
  • Celery
  • Orange Bell Pepper
  • Sweet Onion
  • Garlic
  • Oil
  • Canned Fire Roasted Diced Tomatoes
  • Heavy Cream
  • Cajun Seasoning
  • Salt/Pepper
  • Hot Sauce (optional)
  • Parsley – Fresh Thyme

How To Make Cajun Shrimp Rice Casserole

  1. Preheat oven to 375ºF
  2. Prepare rice according to package instructions. Set aside.
  3. In large sauté pan over medium/high heat; cook celery, bell pepper and onions in oil until tender. Add garlic and cook for 1 minute.
  4. Transfer sautéed veggies, cooked rice and thawed shrimp to a large bowl. In separate bowl, mix Muir Glen Organic Fire Roasted Diced Tomatoes, heavy cream, Cajun seasoning, salt, pepper and hot sauce. Pour mixture over shrimp and rice. Stir until fully combined.
  5. Transfer to a large casserole dish sprayed with nonstick.
  6. Bake for 25-30 minutes or until shrimp are cooked through. Serve topped with fresh parsley and thyme.

  • 4 Celery Stalks Celery - chopped
  • 1 Orange Bell Pepper - seeded chopped
  • 1 Sweet Onion - chopped
  • 3-4 Garlic Cloves - chopped
  • 3 Tablespoons Oil
  • 1 14.5oz Can Muir Glen Organic Fire Roasted Diced Tomatoes
  • 1/4 Cup Heavy Cream
  • 2 Tablespoons Cajun Seasoning
  • Salt/Pepper* - to taste
  • 1 Tablespoon Hot Sauce optional
  • Parsley – Fresh Thyme

Instructions

Notes

*If Cajun seasoning blend includes salt be sure nopt to add too much additional salt.
