BURRATA GRILLED PEACH SALAD
This BURRATA GRILLED PEACH SALAD is summertime flavor on a plate. Fresh sweet peaches grilled, creamy burrata cheese, peppery arugula and a drizzle of tangy balsamic vinegar.

Burrata Salad
This salad comes together in no time with minimal ingredients while still packing loads of flavor! Grilling the peaches brings out even more sugars. The super creaminess of the burrata is perfect with grilled fruit. Balsamic glaze is the final indulgent ingredient, be sure to use a good quality balsamic glaze or make your own >> BALSAMIC GLAZE.
When choosing your peaches, find ones that are ripe but still firm to the touch. If they’re too soft they will fall apart on the grill. If using an outdoor grill for this recipe, do not cut the peaches into quarters, otherwise, they will fall through the grates. Instead cut them in half and remove the pit. If you do not have a grill or grill pan you can roast the peaches in the oven.

INGREDIENT OPTIONS:
- Nectarines, apricots or plums can be used in place of the peaches.
- Pearl mozzarella balls, ricotta or goat cheese can be used instead of burrata.
- Feel free to use your preferred salad greens.
- Use your favorite balsamic or fruity salad dressing.

BURRATA GRILLED PEACH SALAD
Ingredients
- 8 ounces burrata cheese
- 3 ripe yellow peaches
- 1 tablespoon butter melted
- 4 cups arugula
- Balsamic glaze for drizzling
- Fresh basil leaves for garnish
- Kosher salt and black pepper to taste (optional)
Instructions
- Cut the peaches into quarters and remove the pit. Brush the cut sides of the peaches with melted butter.
- Heat the grill pan on medium heat.
- Grill the peach slices for 4-5 minutes or until the peaches have grill marks. Carefully flip the peaches over and grill for another 3 minutes. Remove the peaches to a plate and cool slightly.
- Add arugula to a large serving platter or plate. Top with grilled peach slices and chunks of burrata.
- Drizzle with balsamic glaze and garnish with basil leaves.*
- Season with salt and black pepper to taste and enjoy.
