BURRATA GRILLED PEACH SALAD
This BURRATA GRILLED PEACH SALAD is summertime flavor on a plate. Fresh sweet peaches grilled, creamy burrata cheese, peppery arugula and a drizzle of tangy balsamic vinegar.
Cut the peaches into quarters and remove the pit. Brush the cut sides of the peaches with melted butter.
Heat the grill pan on medium heat.
Grill the peach slices for 4-5 minutes or until the peaches have grill marks. Carefully flip the peaches over and grill for another 3 minutes. Remove the peaches to a plate and cool slightly.
Add arugula to a large serving platter or plate. Top with grilled peach slices and chunks of burrata.
Drizzle with balsamic glaze and garnish with basil leaves.*
Season with salt and black pepper to taste and enjoy.
Notes
*Add a drizzle of high quality olive oil along with the balsamic vinegar if preferred.
