BURRATA GRILLED PEACH SALAD

This BURRATA GRILLED PEACH SALAD is summertime flavor on a plate. Fresh sweet peaches grilled, creamy burrata cheese, peppery arugula and a drizzle of tangy balsamic vinegar.

Ingredients

  • 8 ounces burrata cheese
  • 3 ripe yellow peaches
  • 1 tablespoon butter melted
  • 4 cups arugula
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish
  • Kosher salt and black pepper to taste (optional)

Instructions

  • Cut the peaches into quarters and remove the pit. Brush the cut sides of the peaches with melted butter.
  • Heat the grill pan on medium heat.
  • Grill the peach slices for 4-5 minutes or until the peaches have grill marks. Carefully flip the peaches over and grill for another 3 minutes. Remove the peaches to a plate and cool slightly.
  • Add arugula to a large serving platter or plate. Top with grilled peach slices and chunks of burrata.
  • Drizzle with balsamic glaze and garnish with basil leaves.*
  • Season with salt and black pepper to taste and enjoy.

Notes

*Add a drizzle of high quality olive oil along with the balsamic vinegar if preferred.
