Just in time for comfort food season, this ragu sauce over pasta will hit the spot. This rich meaty sauce will warm you up on the chilliest of nights.

Ingredient Options:

  • Feel free to omit the pork sausage and use only ground beef if preferred.
  • I think this sauce is best with tagliatelle but any pasta can be used.
  • Use a good wine that you would actually drink.
  • Add more garlic and/or herbs to fit your tastes.

BEEF RAGU

This BEEF RAGU is an easy comforting dinner recipe. Ground beef and pork sausage in a rich tomato sauce served over tagliatelle pasta.

Ingredients

  • 8 ounces Tagliatelle Pasta
  • 8 oz pork sausage about 2 cups cut into half circles
  • 1 lb ground beef
  • 1 large yellow onion diced
  • 1 carrot diced
  • 1 celery stick diced
  • 2 garlic cloves peeled and roughly chopped
  • cups Tomato Passata tomato puree
  • 1 8oz can chopped tomato
  • 2 tbsp tomato paste
  • 1 cup red wine such as Chianti
  • Few sprigs of fresh rosemary or 1tbsp dried rosemary
  • 1 tsp oregano
  • 2 tbsp olive oil plus 1tbsp for the tagliatelle
  • 1 tbsp sugar
  • Pepper and salt to taste
  • Garnish:
  • 1/4 cup parsley finely chopped

Instructions

  • Ragu:
    Heat a saucepan over medium heat. Add olive oil and sauté the vegetables - onion, garlic, carrot and celery. Cook until the onions are soft and golden brown. Once you get a golden tan, add the rosemary and saute for no more than a minute. Add the remaining spices, plus salt.
    Add ground beef and cook until golden brown.
    Then add the sausage. Fry for 5-6 minutes until the edges of the sausage pieces are browned.
    Add the red wine and cook for 8-10 minutes on low heat.
    Add sugar, pour in the tomato paste, canned tomatoes, and pureed tomatoes. If the sauce is too thick, add half a cup of water. Close the pot with a lid and cook for about 1 hour.
  • Pasta:
    Fill large pot with water.
    Add 2 tablespoons olive oil and 1 teaspoon of salt. Heat over medium/high - once boiling add the tagliatelle and cook according to package instructions.
    Once cooked toss pasta with 1 tablespoon of olive oil (optional).

    Pour the sauce over the tagliatelle - toss gently.
    Serve warm with a sprinkling of finely chopped parsley.

Notes

Top with shaved parmesan for extra flavor.
