How to Make Perfect Sushi Rice at Home

I have switched over to making sushi at home. Cutting costs and controlling ingredients are the main reasons. And if you are a sushi lover, you know the sushi rice has got to be on point. Get the rice right, and the sushi follows. It is the foundation of every great sushi roll.

What Is Sushi Rice?

Sushi rice is a short-grain Japanese rice that becomes sticky when cooked. This texture allows the rice to hold together when making sushi rolls, nigiri, and other Japanese dishes.

It should be tender and slightly sticky, with a delicate balance of sweetness, acidity, and salt. 

Tips for Perfect Sushi Rice

Use the right rice. Look for Japanese short-grain rice labeled “sushi rice.” Long-grain varieties such as basmati or jasmine rice won’t produce the same texture.

Don’t skip rinsing. Washing the rice removes excess starch and helps create the ideal sticky-but-not-mushy texture.

Don’t overmix. Stirring the cooked rice aggressively can crush the grains and make the texture too sticky.

Use the rice while it’s fresh. Sushi rice is best used the same day it is prepared. Keep it covered with a clean, slightly damp kitchen towel while working so it doesn’t dry out.

Let it cool before making sushi. Rice that is too hot can make sushi rolls difficult to assemble and can affect the texture of ingredients such as raw fish.

Sushi Rice Recipe

Ingredients

  • 2 cups water
  • 2 cups sushi rice
  • ¼ cup rice vinegar
  • 2 Tb sugar
  • ½ teaspoon salt

Instructions

  • Using a fine grade strainer or colander (something where the rice won’t just fall through the holes), rinse the rice until the water runs clear.
  • Place 2 cups of water and the rinsed sushi rice into a medium saucepan and bring to a boil.
  • Once boiling, reduce the heat to low, cover, and allow to simmer for 20 minutes.
  • At the end of 20 minutes, the rice should have absorbed all of the water. Remove from heat and allow to cool.
  • Combine the rice vinegar, sugar, and salt in a small saucepan. Whisk the ingredients together over medium heat until the sugar dissolves.
  • Allow the vinegar mixture to cool and then pour over the rice.
  • Stir to combine and allow the rice to absorb all of the vinegar mixture.
  • Let rice cool.
