Taquitos make a fantastic main dish for dinner – adults and kids love taquitos! These are also super easy to prepare. Use store bought rotisserie chicken to make dinner extra quick and easy.

Serve with your favorite toppings and dips for a fun, flavorful meal.

Recipe Notes:

  • If you are gluten-free, use corn tortillas. Be sure to warm up the corn tortillas over medium heat (until pliable) before assembling the taquitos. 
  • You can also bake the taquitos. Grease a baking sheet with cooking spray, then add the taquitos. Brush each taquito with a bit of vegetable oil, then bake at 425 degrees Fahrenheit for 15 minutes.
  • Storage suggestion: Store taquitos in an airtight container for up to 3 days.
  • Possible substitutions: Shredded beef or pork instead of chicken. Different variations of cheese. Different variations of salsa (maybe green salsa instead of classic red salsa). Corn tortilla instead of flour tortilla.
  • Possible toppings: guacamole, sour cream, cilantro, red salsa, mango salsa, etc.

Ingredients

  • 2 cups cooked shredded chicken
  • 6 ounces cream cheese softened
  • ¼ cup red salsa
  • ¼ cup sour cream
  • 1 cup shredded cheddar cheese
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • Salt & pepper to taste
  • 10-15 flour tortillas
  • Vegetable Oil

Instructions

  • Mix the softened cream cheese, salsa, and sour cream in a large bowl until well combined.
  • Pour the shredded chicken, cheddar cheese, cumin, chili powder, garlic powder, salt, and pepper into the bowl and fold into the cream cheese mixture.
  • Assemble the taquito by adding 2 tablespoons of filling to each flour tortilla. Use less or more depending on the taquito thickness you desire. Then, using your fingers, roll the taquitos up tightly.
  • Heat 1-2 inches of vegetable oil in a large skillet over medium-high heat. Be sure to wait until the oil is hot to begin cooking the taquitos.
  • Fry 2-3 taquitos at a time, rotating them until golden brown on all sides. Finish frying up all of the taquitos. Serve warm.
