This creamy coconut pie is absolute perfection. It takes just 10 minutes to prepare and is great as a make ahead dessert.

A graham cracker crust is filled with thick coconut cream filling. As if that is not delicious enough, we are topping this pie with Lucky Leaf Blueberry Fruit Filling or Topping. Lucky Leaf is a high quality and easy to use dessert product. The bright blueberry topping is a wonderful combination with this cream pie.

Ingredients

  • 1 13.5oz Can Coconut Milk
  • 1 3.4oz Box Coconut Cream Instant Pudding
  • 2 Tablespoons Powdered Sugar *optional
  • 1 Cup Frozen Whipped Topping - thawed
  • 1 Cup Sweetened Shredded Coconut
  • 1 21oz Can Lucky Leaf Blueberry Topping
  • 1 6oz Graham Cracker Pie Crust

Instructions

  • Using a hand mixer, combine coconut milk, instant pudding mix and powdered sugar. Beat on high 2-3 minutes or until no lumps remain.
  • Fold in whipped topping and sweetened shredded coconut.
  • Transfer mixture to store bought graham cracker pie crust, spread evenly.
  • Top coconut mixture with Lucky Leaf Blueberry Topping, spread evenly.
  • Cover and refrigerate at least 3 hours to set.
  • Slice and serve.

*The powdered sugar is optional. Without the sugar the pie will be a lightly sweet version. If you prefer sweeter cream pies, add the powdered sugar.
Serve with additional whipped topping and shredded coconut.
The coconut cream pudding mix can be substituted with vanilla instant pudding mix if needed.
You can find canned coconut milk in the Asian foods section of your grocery store.

  1. Oh my word! That looks so very yummy! However I’m not quite sure if I would want blueberries on top though. I am so sorry that my husband is allergic to coconut. Out of respect for him I won’t be able to fix it.
