Pasta Salad With Fresh Asparagus And Lemon Dressing

This pasta salad is a great way to enjoy fresh asparagus. The bright lemony dressing is fantastic with the asparagus.

Serve this pasta warm or cold and it goes well with just about any dish. That makes this pasta salad perfect for potlucks, barbecues and parties.

Can This Pasta Salad Be Made The Night Before

Yes, pasta salads are great the next day. In fact making it the day before gives the flavors time to blend. If you need to loosen the pasta salad up a bit before serving, add a drizzle of olive oil.

Just be sure to store this pasta salad in an air tight container in the refrigerator.

Can More Ingredients Be Added To This Pasta Salad

Yes, this pasta salad recipe is a bit minimalist. Feel free to dress it up however you prefer.

Add fresh tomatoes, spinach, peppers, etc.

  • Pasta (I used Casarecce pasta)
  • Fresh Asparagus
  • Lemon
  • Olive Oil
  • Salt/Pepper
  • Sugar

How To Make Asparagus Lemon Pasta Salad

  1. Trim ends off of asparagus. Cut asparagus spears into 1-2″ pieces.
  2. Boil the pasta according to package instructions. Drop the asparagus into boiling pasta the last 2-3 minutes. Drain pasta and asparagus, transfer to large bowl.
  3. Mix dressing ingredients: lemon juice, oil, lemon zest, salt, pepper and sugar. Pour dressing over asparagus and pasta.
  4. Toss until pasta is evenly coated with dressing. Taste and add more salt/pepper as needed.
