Lemon Asparagus Pasta Salad Recipe

This Asparagus Pasta Salad Recipe is simple summer side dish. With a mild lemon dressing and fresh asparagus this pasta salad goes well with just about anything.

Ingredients

  • 16 ounces Pasta I used Casarecce pasta
  • 16 ounces Fresh Asparagus
  • 2 Tablespoons Lemon
  • Zest of 1 Lemon
  • 4 Tablespoons Olive Oil
  • Salt/Pepper - to taste
  • Sugar

Instructions

  • Trim ends off of asparagus. Cut asparagus spears into 1-2″ pieces.
  • Boil the pasta according to package instructions. Drop the asparagus into boiling pasta the last 2-3 minutes. Drain pasta and asparagus, transfer to large bowl.
  • Mix dressing ingredients: lemon juice, oil, lemon zest, salt, pepper and sugar. Pour dressing over asparagus and pasta.
  • Toss until pasta is evenly coated with dressing. Taste and add more salt/pepper as needed.
