Chicken Taco Bake Casserole With Rice

Quick and easy dinners are a must for todays busy lifestyle. We want to feed our family a nutritious homemade meal but we don’t have hours to spend in the kitchen. This taco casserole comes together in no time. Especially if you cheat (like me) and buy precooked chicken at Costco. In fact, I do the super-duper cheat and buy the precooked de-boned rotisserie chicken at Costco. . . Life Saver!

As for the rice, use whatever brown or white rice you prefer. Standard cook rice or quick cook rice will both work fine. Just be sure to cook slightly al dente since it will be baked as well.

Is Taco Casserole Healthy

This recipe certainly has all the food groups and is a nutritious satisfying family meal. I would consider this a healthy dinner.

  • White Rice
  • Chicken Broth
  • Taco Seasoning
  • Fire Roasted Tomatoes
  • Black Beans
  • Frozen Corn
  • Cooked Chicken
  • Shredded Colby/Jack Cheese
  • Toppings: Olives, Sour Cream, Cheese, Lettuce, Cilantro, Tortilla Chips, Avocado, Jalapeno, Hot Sauce, Salsa, Tomatoes, etc.

How Do You Make Taco Casserole

  1. Preheat oven to 350ºF
  2. Prepare the rice in chicken broth according to package instructions.
  3. In large bowl, combine cooked rice, taco season, tomatoes, beans, corn and cooked chicken. Mix.
  4. Transfer mixture to a large greased casserole dish. Top with shredded cheese.
  5. Bake for 15-20 minutes.
  6. Arrange topping on top and serve.

Can This Be Made Ahead

Yes, this can definitely be made ahead. Prepare the casserole without toppings then cover and refrigerate. Reheat and add toppings before serving.

What Is The Best Way To Store Taco Casserole

Cover and refrigerate. If you plan to have lots of leftovers leave off the sour cream and lettuce. This will make reheating more appealing, the sour cream and lettuce can be added before serving.
