Ingredients

  • 1 Cup White Rice
  • 2 Cups Chicken Broth Chicken Broth
  • 1 ounce Package Taco Seasoning
  • 14 ounce Can Fire Roasted Tomatoes
  • 15 ounce Can Black Beans
  • 1 Cup Frozen Corn
  • 3 Cups Cooked Chicken - chopped or shredded
  • 2 Cups Shredded Colby/Jack Cheese
  • Toppings: Olives Sour Cream, Cheese, Lettuce, Cilantro, Tortilla Chips, Avocado, Jalapeno, Hot Sauce, Salsa, Tomatoes, etc.

Instructions

  • Preheat oven to 350ºF
  • Prepare the rice in chicken broth according to package instructions.
  • In large bowl, combine cooked rice, taco season, tomatoes, beans, corn and cooked chicken. Mix.
  • Transfer mixture to a large greased casserole dish. Top with shredded cheese.
  • Bake for 15-20 minutes.
  • Arrange toppings on top and serve.
