Mix the softened cream cheese, salsa, and sour cream in a large bowl until well combined.
Pour the shredded chicken, cheddar cheese, cumin, chili powder, garlic powder, salt, and pepper into the bowl and fold into the cream cheese mixture.
Assemble the taquito by adding 2 tablespoons of filling to each flour tortilla. Use less or more depending on the taquito thickness you desire. Then, using your fingers, roll the taquitos up tightly.
Heat 1-2 inches of vegetable oil in a large skillet over medium-high heat. Be sure to wait until the oil is hot to begin cooking the taquitos.
Fry 2-3 taquitos at a time, rotating them until golden brown on all sides. Finish frying up all of the taquitos. Serve warm.
Notes
You can also bake the taquitos. Grease a baking sheet with cooking spray, then add the taquitos. Brush each taquito with a bit of vegetable oil, then bake at 425 degrees Fahrenheit for 15 minutes.
