Cucumber Roll Ups

These cucumber roll ups are a fun appetizer or great as a light lunch or dinner. Chicken, buffalo sauce, mayo, onions, celery and dill all rolled up in thinly sliced cucumbers. Perfect for summertime parties.

Ingredients

  • - 1 large cucumber
  • - ½ cup cooked and shredded chicken
  • - 1/4 cup buffalo sauce
  • - 1/4 cup mayonnaise
  • - 1/4 cup diced celery
  • - 1/4 cup diced red onion
  • - Salt and pepper to taste
  • - Fresh chives and dill for garnish

Instructions

  • Peel the cucumber and slice it lengthwise using a vegetable peeler or a mandoline slicer to create thin strips (6 or 7)
  • Pat the cucumber dry then lay flat. Spread mayonnaise then place diagonally the shredded chicken, buffalo sauce, celery, red onion add salt, and pepper.
  • Drizzle buffalo sauce over chopped veggies and chicken
  • Roll the cucumber strip tightly around the filling to create a roll.
  • Secure the roll with a toothpick if necessary. Cut it into 6 rolls.
  • Arrange the buffalo chicken cucumber rolls on a serving plate.
  • Garnish with chopped chives and dill.
