Peanut Butter and Jelly Microwave Mug Cake

Microwave Cake Recipe

Peanut Butter and Jelly.  That pretty much sums up my childhood right there.  How many PB&J’s did I consume as a kid?  Too many to count, that’s for sure.

Actually, my favorite was Peanut Butter, Banana and Honey Sandwiches.  Those were a real treat!  Maybe I’ll have to make a Microwave Mug Cake with that flavor combo next time.

A while back I came across a recipe for Quick Nutella Mug Cake on The Comfort of Cooking.  I had never tried a microwave mug cake before because I was skeptical.  But this particular Nutella Mug Cake looked delicious.  So I gave it a try.  And it was tasty!  Perfect for my late night sweet cravings.

Since then I have been making all sorts of mug cakes.  I’ve made pumpkin cakes, spiced cakes, funfetti cakes and peanut butter cakes.

Microwave Mug Cake is a little dryer and crumbly than regular cake (I ain’t gonna lie).  So most of the time I top them with whipped cream or maple syrup to add that moisture.  The Peanut Butter Mug Cake was screaming for Jelly instead of whipped cream!  I used Strawberry Smucker’s.  Use your favorite flavor.  Grape Jelly, anyone!?!?

If you are looking for a cake type treat that takes less than 5 minutes to make . . . well, this is for you.  And I usually decrease the recipe by half for myself.  I just need those 5-6 bites of cake to make my tummy happy.

Ingredients

  • 1/4 Cup All Purpose Flour
  • 1/4 Cup Peanut Butter
  • 1/4 Cup Whole Milk
  • 1/2 teaspoon Baking Powder
  • 2 Tablespoons Ultrafine Sugar
  • Jelly Flavor of Choice

Instructions

  • In small bowl; mix flour, baking powder and sugar.
  • Add peanut butter and milk. Mix until fully incorporated.
  • Spray microwavable mug with non-stick. Transfer batter to mug.
  • Microwave on high for 60-90 seconds or until middle is done.
  • Top with a generous dollop of your favorite jelly and Enjoy!

Notes

You can mix batter in mug without spraying with non-stick. This step is just because I'm lazy about dishes and don't like to scrub.
