Chicken Broccoli Casserole

LOW CARB BROCCOLI CHEESE CASSEROLE

Ingredients
- 2 Lbs Boneless Skinless Chicken Thighs
- 1 Lb Broccoli Florets
- 8 ounces Cream Cheese
- 1/2 Cup Mayonnaise
- 1/2 Cup Heavy Cream
- 1 teaspoon Garlic Powder
- 2 Tablespoons Dry Ranch Seasoning
- Salt/Pepper
- 3 Cups Shredded Cheddar Cheese – divided
Instructions
- Cook chicken using preferred method. I prefer to poach the chicken thighs (simmer in water 15-20 minutes). Chop and set aside.
- Blanch broccoli – Drop broccoli into boiling water. Boil 2 minutes then immediately transfer broccoli to ice cold water to cool. Drain, set aside.
- Preheat oven to 375ºF
- Mix cream cheese, mayo, cream, garlic powder and ranch season until smooth. Salt and pepper to taste.
- Add chicken, broccoli and 1 cup shredded cheese to creamy mixture. Stir together then transfer to casserole dish.
- Bake 15 minutes. Top with remaining shredded cheese. Broil on high 3-5 minutes to brown. Let cool 5 minutes before serving.
